SharePoint 2013 Farm / Server backup and recovery

We have a SharePoint 2013 Farm with 5+ Web/Application virtual machines (VMWare vSphere) and a Physical SQL Server 2012 server.

If we were to perform nightly application consistent backups (using SharePoint VSS) of the virtual machines, does Microsoft support restoring individual virtual servers from the previous night's backup into the production farm (where the production server has become corrupted).

Also, in the case of a corrupted farm / configuration database (human error) where the SharePoint content databases are still valid, could we restore all the virtual machines from the previous night's backup and restore the SharePoint config database from the previous night's SQL Server backup (and leave the content databases). We have 3TBs of content databases therefore would prefer to avoid restoring these if they are not corrupt. Is this supported / what are the risks?
