3 changes I need to make for a Web Application for a Public Facing Poral (Publishing Site)

Hello,

I am experimenting with creating and branding my company website using a Publishing Site (or Public Facing Portal) and I have run into 3 barriers I would like to find easy fixes to change.

1.   How can I switch between Anonymous access?   When I first create the site about Mid-way down on creating the Web Application it says "Allow Anonymous Access" with either Yes or No.  How can I change this feature after I have built the site.

I have followed these rules but they didn't help.  I still have to log into my site with my username and password.

2.  How can I change the Application Pool Administrator?   I accidentally setup the site using our domain Administrator account instead of our allocated SharePoint Admin account (yes, my accident).  Some of the functionality is restricted.   How can I change the user back to the SharePoint Admin? 

3.  How can I change the names of the Web Applications?  I have 4-5 Web Applications that are all labeled "SharePoint - port number"   I want to change the names so I clearly know what each Web Application corresponds to which site I am working on.

I hope to think that these 3 things are easy to change.  I would tend to think that they are not complex BUT I don't want to crash my sites or cause any problems.
